Ingredients
  

  • 3 pound beef chuck roast
  • 1 cup apple cider
  • 1 cup pumpkin puree
  • 1/2 cup barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 clove garlic minced
  • 1 large onion sliced
  • 1 tablespoon olive oil

Instructions
 

  • Place the beef chuck roast on a cutting board and season with salt and pepper.
  • Heat olive oil in a skillet over medium heat and brown the beef on all sides.
  • Transfer the beef to the slow cooker.
  • In a large mixing bowl, combine apple cider, pumpkin puree, barbecue sauce, Worcestershire sauce, smoked paprika, and minced garlic.
  • Pour the mixture over the beef in the slow cooker.
  • Add the sliced onion on top of the beef.
  • Cover and cook on low for 8 hours.
  • Once cooked, remove the beef from the slow cooker and let it rest for 10 minutes.
  • Shred the beef using two forks.
  • Serve the shredded beef with the sauce from the slow cooker.

Notes

For best results, choose a well-marbled beef chuck roast to ensure tenderness and flavor. This dish pairs well with mashed potatoes or crusty bread to soak up the delicious sauce. Adjust the seasoning to taste, especially if you prefer more heat or sweetness in your BBQ sauce.
