Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups carrots sliced
  • 2 cups celery sliced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Place the chicken breasts in the slow cooker.
  • Pour the chicken broth over the chicken.
  • Add carrots, celery, onion, and garlic to the slow cooker.
  • Season with salt, pepper, thyme, and rosemary.
  • Cover and cook on low for 6 hours.
  • Remove the chicken from the slow cooker and shred it using two forks.
  • Return the shredded chicken to the slow cooker.
  • Add egg noodles to the slow cooker.
  • Cover and cook on high for 1 additional hour.
  • Stir in fresh parsley before serving.

Notes

For a richer flavor, consider sautéing the onions, carrots, and celery in a bit of olive oil before adding them to the slow cooker. If you prefer, you can substitute the egg noodles with any pasta of choice or even rice for a different texture. Adjust the seasoning to taste towards the end of the cooking time, as the flavors will develop over time.
