Ingredients
  

  • 3 pounds corned beef brisket
  • 2 cups water
  • 1 medium onion quartered
  • 3 cloves garlic minced
  • 1 pound carrots peeled and sliced
  • 1 pound potatoes peeled and quartered
  • 1 head cabbage cut into wedges
  • 1 tablespoon black peppercorns
  • 1 bay leaf

Instructions
 

  • Place the corned beef brisket into the slow cooker.
  • Add the water, onion, and garlic to the slow cooker.
  • Sprinkle the black peppercorns and bay leaf over the brisket.
  • Cover and cook on low for 8 hours.
  • Add the carrots and potatoes to the slow cooker in the last 3 hours of cooking.
  • Add the cabbage wedges in the last hour of cooking.
  • Once cooked, remove the brisket and let it rest for 10 minutes before slicing.
  • Serve the sliced corned beef with the cooked vegetables.

Notes

For best results, ensure that the corned beef is fully submerged in liquid while cooking, adding more water if necessary. Consider cutting the vegetables into uniform sizes to ensure even cooking. If you prefer a more flavorful broth, substitute some of the water with beef broth or beer. Adjust the seasoning to your taste, as the corned beef can be quite salty.
