Smoky Okra Stew with Sweet Potato Mash

Ingredients
  

  • 1 pound okra sliced
  • 2 tablespoon olive oil
  • 1 large onion diced
  • 2 clove garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can diced tomatoes 14 ounces
  • 1 cup vegetable broth
  • 2 medium sweet potatoes peeled and cubed
  • 1/4 cup milk
  • 2 tablespoon butter
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Stir in the smoked paprika, cumin, and cayenne pepper, cooking for an additional minute.
  • Add the sliced okra to the pot and sauté for 5 minutes.
  • Pour in the diced tomatoes and vegetable broth, then bring to a simmer.
  • Cover the pot and let the stew simmer for 30 minutes, stirring occasionally.
  • While the stew is simmering, place the cubed sweet potatoes in a medium saucepan and cover with water.
  • Bring the water to a boil and cook the sweet potatoes until tender, about 15 minutes.
  • Drain the sweet potatoes and mash with milk and butter until smooth.
  • Season both the stew and sweet potato mash with salt and pepper to taste.
  • Allow the stew to rest for 5 minutes before serving.

Notes

For the best results, make sure to slice the okra uniformly to ensure even cooking. If you prefer a thicker stew, allow it to simmer uncovered for the last 10 minutes. The sweet potato mash can be made creamier by adding more milk or butter according to your preference. Adjust the spices to suit your taste if you prefer a milder or spicier dish.
