Ingredients
  

  • 2 cup fresh fruit (berries, peaches, or apples) diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sourdough starter discard
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine the diced fresh fruit, 1/4 cup sugar, and lemon juice, then set aside.
  • In a medium mixing bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
  • Add the sourdough starter, melted butter, vanilla extract, and milk to the dry ingredients, and mix until just combined.
  • Pour the fruit mixture into the bottom of a 9x9 inch baking dish.
  • Spread the batter evenly over the fruit mixture using a spatula.
  • Bake in the preheated oven for 35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it rest for 10 minutes before serving.

Notes

For the best results with this Sourdough Cobbler, make sure your fruit is ripe and juicy to add natural sweetness and moisture to the dish. Adjust the sugar in the recipe if your fruit is particularly sweet or tart.
