Ingredients
  

  • 1 cup sourdough starter unfed
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips optional

Instructions
 

  • In a large mixing bowl, combine the sourdough starter, pumpkin puree, eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract, and whisk until smooth.
  • In a medium mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients and stir with a wooden spoon until just combined.
  • Fold in nuts or chocolate chips if using.
  • Pour the batter into a greased loaf pan and spread evenly.
  • Cover the loaf pan with a clean cloth and allow the batter to rest at room temperature for 8 hours or overnight.
  • Preheat the oven to 350°F (175°C).
  • Bake the bread for 1 hour, or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes.
  • Transfer the bread to a cooling rack to cool completely before slicing.

Notes

For an extra moist and flavorful bread, ensure your sourdough starter is well hydrated and at room temperature before mixing. If you prefer a more pronounced sourdough flavor, you can extend the resting time in the refrigerator for up to 24 hours. Adjust the spices according to your taste preference, and always use fresh spices for the best aroma and flavor.
