Ingredients
  

  • 4 cups fresh blackberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium saucepan, combine blackberries, 1/2 cup of sugar, and lemon juice and heat over medium heat until the sugar dissolves.
  • In a large mixing bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  • Add milk and vanilla extract to the dry ingredients and stir until a smooth batter forms.
  • Pour the melted butter into the baking dish.
  • Pour the batter over the melted butter, but do not stir.
  • Spoon the blackberry mixture evenly over the batter.
  • Bake in the preheated oven for 40 minutes or until the top is golden brown.
  • Allow the cobbler to rest for 10 minutes before serving.

Notes

To enhance the flavor of your cobbler, consider using a mix of slightly underripe and ripe blackberries for a perfect balance of tartness and sweetness. You can also sprinkle a little extra sugar on top before baking for a caramelized finish. Make sure to serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate dessert experience.
