Ingredients
  

  • 1 medium spaghetti squash
  • 2 tablespoon olive oil
  • 1 pound chicken breast diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup chicken broth
  • 1 can diced tomatoes 15 ounces
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can corn 15 ounces, drained
  • 4 ounce cream cheese softened
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoon fresh cilantro chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Brush the cut sides of the squash with olive oil and place face down on a baking sheet.
  • Bake the squash for 30-40 minutes or until tender.
  • In a large pot, heat olive oil over medium heat.
  • Add diced chicken breast to the pot and season with salt, pepper, garlic powder, and onion powder.
  • Cook the chicken until browned and cooked through, then remove and set aside.
  • In the same pot, add chicken broth, diced tomatoes, black beans, and corn.
  • Stir in cream cheese, chili powder, and cumin until well combined.
  • Add the cooked chicken back to the pot and mix everything together.
  • Simmer the chili for 15 minutes, allowing the flavors to blend.
  • Scrape the strands of the roasted spaghetti squash with a fork and place them in a large bowl.
  • Pour the chicken chili over the spaghetti squash and mix gently.
  • Top with shredded cheddar cheese and chopped cilantro.
  • Let the dish rest for 10 minutes before serving.

Notes

For best results, choose a ripe spaghetti squash with a firm, even color and no soft spots. If you prefer more heat, feel free to add chopped jalapeños or a pinch of cayenne pepper to the chili. The cream cheese will add a subtle creaminess, so adjust the amount according to your taste preference. This dish can be made ahead of time and reheated, making it convenient for meal prepping.
