Ingredients
  

  • 2 spaghetti squash medium
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut each spaghetti squash in half lengthwise using a sharp knife.
  • Scoop out the seeds and discard them.
  • Drizzle the cut sides of the squash with olive oil, then sprinkle with salt and black pepper.
  • Place the squash halves cut side down on a baking sheet.
  • Bake in the preheated oven for 30-40 minutes until the squash is tender.
  • Remove from the oven and let the squash rest for about 5 minutes.
  • Use a fork to scrape the flesh of the squash into spaghetti-like strands.
  • In a mixing bowl, combine the squash strands, crumbled feta, chopped parsley, garlic powder, and lemon juice.
  • Mix until well combined and serve warm.

Notes

When preparing Spaghetti Squash with Feta, ensure the squash is cooked thoroughly by checking if it's tender with a fork before removing it from the oven. You can adjust the seasoning to taste, adding more lemon juice or garlic powder if you prefer a stronger flavor. For a more filling dish, consider adding cooked chicken or chickpeas for added protein.
