Spiced Apple and Mushroom Wild Rice Stew

Ingredients
  

  • 1 cup wild rice
  • 2 tablespoon olive oil
  • 1 onion diced
  • 2 clove garlic minced
  • 2 apples peeled and chopped
  • 8 ounce mushrooms sliced
  • 4 cup vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • salt to taste
  • pepper to taste
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Rinse the wild rice under cold water and set aside.
  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and cook until translucent.
  • Stir in the minced garlic and cook for another minute.
  • Add the chopped apples and sliced mushrooms to the pot.
  • Cook until the mushrooms are tender, about 5 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Stir in the wild rice, cinnamon, nutmeg, and cloves.
  • Season with salt and pepper to taste.
  • Reduce the heat to low, cover the pot, and simmer for 45 minutes.
  • Remove from heat and let the stew rest for 5 minutes.
  • Stir in the chopped parsley before serving.

Notes

To enhance flavor, consider sautéing the mushrooms separately until they are golden brown before adding them to the stew. If you prefer a thicker stew, you can mash some of the apples during the cooking process. For added texture, consider topping the stew with toasted nuts or seeds.
