Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2/3 cup cherry preserves
  • 2 cups heavy cream chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups dark chocolate chopped
  • 1 cup white chocolate shavings
  • 1/2 cup cherries for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, sugar, butter, cinnamon, ginger, nutmeg, cloves, and salt.
  • Use an electric mixer to blend until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of a 9-inch springform pan.
  • Bake for 12-15 minutes or until lightly golden; let cool on a cooling rack.
  • In a saucepan, warm cherry preserves over low heat until smooth.
  • Spread the cherry preserves evenly over the cooled crust.
  • In a separate bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Spread the whipped cream over the cherry layer.
  • Sprinkle chopped dark chocolate and white chocolate shavings over the whipped cream.
  • Garnish with whole cherries.
  • Refrigerate the cake for at least 1 hour before serving.
  • Use a serrated knife to slice and serve chilled.

Notes

For the best results, ensure that the heavy cream is well-chilled before whipping to achieve the desired consistency. Additionally, the cake can be made a day ahead and stored in the refrigerator to enhance the flavors. If you prefer a more intense spice flavor, adjust the quantities of spices according to your taste preference.
