Equipment

  • 1 Baking sheet
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Spatula
  • 1 Oven mitt
  • 1 Cooling rack

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup diced candied chili peppers

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, salt, cinnamon, chili powder, and cayenne pepper.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Fold in the chocolate chips and diced candied chili peppers using a spatula.
  • Drop tablespoon-sized balls of dough onto a baking sheet, spacing them about 2 inches apart.
  • Bake the cookies for 10 to 12 minutes or until golden brown around the edges.
  • Remove the cookies from the oven and let them rest on the baking sheet for 2 minutes.
  • Transfer the cookies to a cooling rack and let them cool completely before serving.

Notes

For best results, ensure the butter is fully softened to create a smooth batter. Adjust the amount of cayenne pepper according to your heat preference. These cookies store well in an airtight container for up to a week, allowing the flavors to develop even more over time. Enjoy with a cold glass of milk to balance the heat!
