Spicy Miso Ramen Soup

Ingredients
  

  • 4 cup chicken broth
  • 2 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste
  • 2 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • 200 gram ramen noodles
  • 1 cup shiitake mushrooms sliced
  • 1 cup bok choy chopped
  • 2 green onions sliced
  • 2 large eggs
  • 1 teaspoon sesame seeds
  • 1 tablespoon nori shredded
  • 1 lime cut into wedges

Instructions
 

  • Heat the large pot over medium heat and add the chicken broth.
  • Whisk in the miso paste, soy sauce, and chili paste until well combined.
  • Stir in the sesame oil, ginger, and garlic, and let it simmer for 10 minutes.
  • In a medium saucepan, bring water to a boil and cook the ramen noodles according to the package instructions.
  • Add the shiitake mushrooms and bok choy to the simmering broth and cook for another 5 minutes.
  • In a separate small saucepan, bring water to a gentle boil and carefully lower the eggs to cook for 7 minutes.
  • Remove the eggs and place them in a bowl of cold water to cool, then peel and slice in half.
  • Drain the cooked ramen noodles and divide them into serving bowls.
  • Ladle the hot broth and vegetables over the noodles in each bowl.
  • Top each bowl with sliced green onions, halved eggs, sesame seeds, and shredded nori.
  • Serve immediately with lime wedges on the side.

Notes

For a more intense flavor, you can toast the sesame seeds before adding them as a topping. Adjust the level of spice by varying the amount of chili paste according to your preference. Additionally, adding a splash of rice vinegar can enhance the depth of the broth.
