Spicy Peanut Ramen with Beef Barley

Ingredients
  

  • 200 grams ramen noodles
  • 200 grams beef thinly sliced
  • 1 cup barley
  • 3 cups beef broth
  • 2 cups water
  • 2 tablespoons olive oil
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon ginger grated
  • 2 cloves garlic minced
  • 1 cup mixed vegetables chopped (bell peppers, carrots, broccoli)
  • 1/4 cup green onions chopped
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced beef and cook until browned, then remove and set aside.
  • In the same pot, add garlic and ginger, sautéing for 1 minute until fragrant.
  • Stir in peanut butter, soy sauce, and sriracha sauce until well combined.
  • Add beef broth, water, and barley, bringing the mixture to a boil.
  • Reduce heat to low and let simmer for 30 minutes or until barley is tender.
  • Add ramen noodles and mixed vegetables to the pot, cooking for an additional 5 minutes.
  • Return beef to the pot to heat through.
  • Season with salt and pepper to taste.
  • Remove from heat and let rest for 10 minutes before serving.
  • Serve hot, garnished with chopped green onions.

Notes

To enhance the flavor of this dish, consider marinating the beef in a mixture of soy sauce, ginger, and garlic for 15 minutes before cooking. This will infuse the meat with additional flavor and tenderness. Adjust the level of spice by increasing or decreasing the amount of sriracha sauce to suit your preference. Feel free to experiment with different vegetables based on what you have on hand to add more variety and color to the dish.
