Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 3 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon red curry paste
  • 2 cup pumpkin puree
  • 4 cup chicken or vegetable broth
  • 1 cup coconut milk
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 package ramen noodles
  • 2 green onions sliced
  • 1 red chili sliced
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in garlic, ginger, and red curry paste, cooking for 1 minute.
  • Add pumpkin puree and stir to combine.
  • Pour in chicken or vegetable broth and bring to a simmer.
  • Reduce heat and let simmer for 10 minutes.
  • Use a blender or immersion blender to puree the soup until smooth.
  • Return to pot and stir in coconut milk, soy sauce, fish sauce, lime juice, and sugar.
  • Season with salt and pepper to taste.
  • In a separate saucepan, cook ramen noodles according to package instructions.
  • Divide noodles among bowls and ladle soup over the top.
  • Garnish with sliced green onions and red chili.

Notes

For best results, taste the soup before serving and adjust the seasoning as needed, as the balance of flavors is crucial in this dish. If you prefer more heat, you can add extra red curry paste or chili slices. Additionally, make sure to use fresh and high-quality ingredients to enhance the overall flavor of the soup.
