Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 4 cup chicken broth
  • 2 packages ramen noodles
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1 cup cooked chicken shredded
  • 2 green onions sliced
  • 1/4 cup cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and garlic, sauté until soft and fragrant.
  • Stir in red and green bell peppers, cooking until slightly tender.
  • Add soy sauce and sriracha, mixing well with vegetables.
  • Pour in chicken broth and bring to a simmer.
  • Break ramen noodles into the pot and cook until noodles are tender.
  • Stir in sesame oil, ground ginger, and shredded chicken.
  • Cook for an additional 5 minutes, allowing flavors to meld.
  • Remove from heat and let rest for 5 minutes.
  • Garnish with sliced green onions and chopped cilantro before serving.

Notes

For an extra depth of flavor, consider adding a splash of lime juice right before serving to brighten the dish. Adjust the spice level by varying the amount of sriracha to taste. If you prefer a vegetarian version, substitute chicken broth and shredded chicken with vegetable broth and tofu.
