Spicy Tomato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 clove garlic minced
  • 1 teaspoon red pepper flakes
  • 4 cup tomatoes chopped
  • 2 cup vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil chopped
  • 1/4 cup heavy cream

Instructions
 

  • Heat the olive oil in a medium pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and red pepper flakes, cooking for 1 minute.
  • Add the chopped tomatoes and cook until they start to break down, about 10 minutes.
  • Pour in the vegetable broth, and stir in the sugar, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  • Remove the pot from heat and let it cool slightly.
  • Carefully transfer the soup to a blender and blend until smooth.
  • Return the blended soup to the pot and reheat gently.
  • Stir in the fresh basil and heavy cream, and heat through.
  • Let the soup rest off the heat for 5 minutes before serving.

Notes

For an extra kick, you can adjust the amount of red pepper flakes to your liking. If you prefer a chunkier texture, blend only half of the soup and mix it with the unblended portion. Always use caution when blending hot liquids, as they can expand and cause the lid to pop off. Serve with crusty bread for a complete meal.
