Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1 cup fresh spinach leaves chopped
  • 1/2 cup feta cheese crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Place the chicken breasts on the cutting board and use the knife to make a pocket in each breast.
  • In the mixing bowl, combine the chopped spinach, crumbled feta, garlic powder, onion powder, salt, pepper, and dried oregano.
  • Stuff each chicken breast pocket with the spinach and feta mixture using a spoon.
  • Use a meat tenderizer to gently flatten the filled chicken breasts for even cooking.
  • Heat olive oil in the oven-safe skillet over medium-high heat.
  • Sear the stuffed chicken breasts in the skillet for 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through.
  • Remove from oven and let the chicken rest for 5 minutes before serving.

Notes

For best results, ensure the chicken breasts are of even thickness to promote even cooking. Feel free to add additional herbs or spices to the spinach and feta filling for extra flavor. If desired, secure the chicken breast openings with toothpicks to prevent the filling from spilling out while cooking.
