Ingredients
  

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach chopped
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup bell pepper diced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the muffin tin with olive oil.
  • In a skillet, heat olive oil over medium heat.
  • Add spinach and bell pepper to the skillet and sauté for 3-4 minutes until soft.
  • In a mixing bowl, whisk together eggs, milk, salt, and black pepper.
  • Stir in the sautéed spinach and bell pepper, and cheddar cheese.
  • Pour the egg mixture evenly into the prepared muffin tin.
  • Bake in the preheated oven for 20-25 minutes until the egg bites are set.
  • Remove from the oven and let them rest for 5 minutes before serving.

Notes

For a richer flavor, you can substitute the milk with half-and-half or add a dash of hot sauce to the egg mixture for a slight kick. These egg bites can be stored in the refrigerator for up to 3 days and reheated in the microwave for a quick breakfast option.
