Ingredients
  

  • 8 units lasagna noodles
  • 15 ounces ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 10 ounces frozen spinach thawed and drained
  • 1 unit egg
  • 2 cups marinara sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package directions, then drain and set aside.
  • In a large mixing bowl, combine ricotta, spinach, egg, salt, pepper, garlic powder, and Italian seasoning.
  • Spread 1/2 cup of marinara sauce on the bottom of the baking dish.
  • Lay a lasagna noodle flat and spread a portion of the ricotta mixture evenly over it.
  • Roll up the noodle and place it seam-side down in the baking dish.
  • Repeat with the remaining noodles and ricotta mixture.
  • Pour the remaining marinara sauce over the roll-ups.
  • Sprinkle mozzarella and Parmesan cheese over the top.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  • Allow the roll-ups to rest for 10 minutes before serving.

Notes

Ensure the spinach is thoroughly drained to prevent excess moisture in the dish. You can customize this recipe by adding cooked ground meat or additional vegetables to the ricotta mixture. For a spicy twist, consider adding a pinch of red pepper flakes.
