Spinach-Miso Beef Stew with Sweet Carrots

  • 1 Wooden spoon
  • 1 sharp knife

Ingredients
  

  • 1 pound beef stew meat cubed
  • 2 tablespoons vegetable oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons miso paste
  • 2 large carrots peeled and sliced
  • 2 cups fresh spinach washed
  • 1 tablespoon soy sauce
  • salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the beef cubes and brown them on all sides.
  • Remove the beef and set aside.
  • In the same pot, add the diced onion and garlic, and sauté until the onion is translucent.
  • Return the beef to the pot and pour in the beef broth.
  • Stir in the miso paste until fully dissolved.
  • Add the sliced carrots to the pot and bring the stew to a boil.
  • Reduce the heat and let it simmer for about 1 hour, or until the beef is tender.
  • Stir in the fresh spinach and soy sauce, and cook for an additional 5 minutes.
  • Season with salt and pepper to taste.
  • Remove the pot from heat and let the stew rest for 15 minutes before serving.

Notes

To enhance the flavor of this stew, consider marinating the beef in soy sauce and a little ginger an hour before cooking. Additionally, you can substitute the spinach with kale or Swiss chard, and adjust the miso paste to your taste preference, either mild or strong. Serve the stew with steamed rice or crusty bread to soak up the delicious broth.
