Ingredients
  

  • 1 Pre-made pie crust
  • 1 tablespoon Olive oil
  • 1 cup Onion diced
  • 1 cup Mushrooms sliced
  • 4 cups Fresh spinach chopped
  • 4 Large eggs
  • 1 cup Milk
  • 1 cup Gruyère cheese shredded
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Nutmeg

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Roll out the pie crust and fit it into the pie dish.
  • In a skillet, heat olive oil over medium heat.
  • Add diced onions and sauté until translucent.
  • Add sliced mushrooms and cook until softened.
  • Stir in chopped spinach and cook until wilted; set aside.
  • In a mixing bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
  • Spread the spinach mixture over the pie crust.
  • Sprinkle shredded Gruyère cheese over the spinach mixture.
  • Pour the egg mixture evenly over the filling.
  • Bake in the preheated oven for 40-45 minutes or until set and lightly golden.
  • Allow the quiche to rest for 10 minutes before slicing and serving.

Notes

For best results, use fresh spinach and mushrooms to enhance the flavor. If you like a richer taste, substitute half-and-half for milk. Ensure the pie crust edges are covered with foil if they start to brown too quickly during baking. Customize the quiche with your favorite herbs or additional vegetables like bell peppers for variety.
