Ingredients
  

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 4 cups fresh spinach chopped
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 2 cups vegetable broth
  • 1 tablespoon fresh parsley chopped (optional for garnish)

Instructions
 

  • In a large saucepan, heat olive oil over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in orzo pasta and cook for 2 minutes, stirring frequently.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 10 minutes until the orzo is al dente.
  • Stir in chopped spinach and cook for another 2 minutes until wilted.
  • Remove from heat and stir in grated Parmesan cheese and lemon juice.
  • Season with salt and pepper to taste.
  • Let the dish rest for 5 minutes before serving.
  • Garnish with fresh parsley if desired.

Notes

To enhance the flavor, consider adding a pinch of red pepper flakes for a bit of heat or include some toasted pine nuts for extra texture. Make sure to stir the orzo often while adding the broth to prevent it from sticking to the bottom of the pan. Adjust the amount of cheese and lemon juice to suit your taste preference.
