Ingredients
  

  • 1 cup Fresh Spinach chopped
  • 1/2 cup Ricotta Cheese
  • 1/4 cup Parmesan Cheese grated
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 sheet Puff Pastry thawed
  • 1 Egg beaten

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a medium mixing bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, olive oil, salt, and black pepper.
  • Roll out the puff pastry sheet on a floured surface until it is smooth and even.
  • Cut the puff pastry into 12 equal squares.
  • Place a spoonful of the spinach mixture in the center of each square.
  • Fold each square in half to form triangles and press the edges to seal.
  • Use a pastry brush to lightly coat each puff with the beaten egg.
  • Arrange the puffs on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20 minutes until golden brown.
  • Let the puffs rest for 5 minutes before serving.

Notes

Ensure the puff pastry is fully thawed before using to make it easier to work with and prevent cracking. For added flavor, consider incorporating garlic or nutmeg into the spinach mixture. You can also make these puffs ahead of time and reheat them in the oven for a quick and delicious appetizer.
