Ingredients
  

  • 4 slices whole grain bread
  • 1 tablespoon olive oil
  • 2 cups fresh spinach washed and dried
  • 1 clove garlic minced
  • 1/4 cup feta cheese crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter softened

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add the minced garlic to the skillet and sauté for 1 minute.
  • Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Season the wilted spinach with salt and black pepper, then remove from heat.
  • Toast the slices of whole grain bread in a toaster until golden brown.
  • Spread a thin layer of butter on one side of each slice of toasted bread.
  • Arrange the cooked spinach evenly over two slices of the buttered bread.
  • Sprinkle crumbled feta cheese over the spinach layer.
  • Place the remaining slices of bread on top to form sandwiches.
  • Cut the sandwiches in half and serve immediately.

Notes

For the best results, ensure that the spinach is thoroughly dried after washing to prevent the sandwich from becoming soggy. Feel free to add other ingredients such as sliced tomatoes or avocado for extra flavor and nutrition. Adjust the seasoning to your preference, and enjoy your delicious and healthy spinach sandwich!
