Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups fresh spinach leaves washed
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another 1 minute.
  • Add the fresh spinach leaves and cook until wilted, about 2-3 minutes.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Reduce heat and simmer for 10 minutes.
  • Remove the pot from heat and let it cool slightly.
  • Carefully transfer the soup to a blender and blend until smooth.
  • Return the blended soup to the pot and stir in the heavy cream.
  • Add salt, black pepper, and nutmeg, and heat gently until warmed through.
  • Serve hot and enjoy.

Notes

For a richer flavor, consider adding a bay leaf while simmering the soup and remove it before blending. You can also substitute the heavy cream with coconut milk for a dairy-free option. Adjust the seasoning according to your taste and feel free to garnish with croutons or a dollop of sour cream for added texture.
