  • 1 Cutting board

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 6 cup vegetable broth
  • 9 ounce cheese tortellini

  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in minced garlic and cook until fragrant.
  • Pour in the vegetable broth and bring to a boil.
  • Add cheese tortellini to the pot and cook according to package instructions.
  • Stir in fresh spinach, dried basil, salt, and black pepper.
  • Cook until the spinach wilts, about 2 minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

For the best flavor, use fresh spinach and consider adding a pinch of red pepper flakes for a bit of heat. If you prefer a thicker soup, you can add a can of drained and rinsed white beans. This soup pairs well with crusty bread or a simple salad for a complete meal.
