Ingredients
  

  • 2 cups fresh spinach chopped
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 cup shredded cheese your choice
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely sliced
  • 1/4 cup hummus
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chopped spinach and sauté for 2-3 minutes until wilted.
  • Remove spinach from the skillet and let it cool for 5 minutes.
  • In a mixing bowl, combine sautéed spinach, shredded cheese, cherry tomatoes, red onion, lemon juice, salt, and pepper.
  • Spread a thin layer of hummus over each tortilla.
  • Divide the spinach mixture evenly among the tortillas.
  • Roll each tortilla tightly to enclose the filling.
  • Slice each wrap diagonally and serve immediately.

Notes

For best results, ensure that the tortillas are fresh and pliable to prevent tearing when rolling. Feel free to customize the filling with your favorite vegetables or add a protein like grilled chicken for a heartier meal. If you prefer a warm wrap, you can lightly toast the filled wraps in the skillet for a couple of minutes on each side before slicing.
