Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease the loaf pan.
  • In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • In another bowl, combine the granulated sugar, brown sugar, eggs, pumpkin puree, vegetable oil, milk, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If using, fold in the chopped nuts with a spatula.
  • Pour the batter into the prepared loaf pan, smoothing the top with the spatula.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a cooling rack.

Notes

For a more intense pumpkin flavor, consider using freshly roasted pumpkin puree instead of canned. Ensure all ingredients are at room temperature before mixing for a smoother batter. Adjust the spices to your taste preference, and consider adding a sprinkle of raw sugar on top before baking for a crunchy crust.
