Ingredients
  

  • 2 cup pumpkin peeled and diced
  • 1 cup apple peeled and cubed
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1 can coconut milk 14 oz
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sauté until onion is translucent.
  • Stir in curry powder, cumin, coriander, and turmeric, cooking for 1 minute until fragrant.
  • Add the pumpkin and apple cubes to the pot, stirring to coat with the spices.
  • Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.
  • Season with salt and pepper to taste.
  • Cover and let the curry simmer for 20-25 minutes, or until the pumpkin is tender.
  • Stir in the lemon juice and chopped cilantro.
  • Remove from heat and let the curry rest for 5 minutes before serving.

Notes

To enhance the flavors of this curry, consider letting the stew sit overnight in the refrigerator; this will allow the spices to meld and deepen. Additionally, serving it with a side of basmati rice or warm naan bread can complement the dish beautifully.
