Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 3 clove garlic minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • 4 cup beef broth
  • 1 cup water
  • Salt to taste
  • Pepper to taste
  • Optional toppings shredded cheese, sour cream, chopped cilantro, tortilla chips

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and minced garlic to the pot and sauté until onions are translucent.
  • Add ground beef to the pot and cook until browned, breaking it apart with a wooden spoon.
  • Drain excess fat from the pot.
  • Stir in taco seasoning and mix well with the beef.
  • Add black beans, corn, diced tomatoes, green chilies, beef broth, and water to the pot.
  • Stir the mixture to combine all ingredients.
  • Increase heat to bring the soup to a boil.
  • Once boiling, reduce heat to low and simmer for 20 minutes, stirring occasionally.
  • Taste and add salt and pepper as needed.
  • Remove from heat and let the soup rest for 5 minutes before serving.
  • Serve hot with optional toppings like shredded cheese, sour cream, chopped cilantro, or tortilla chips.

Notes

For a thicker soup, consider adding a tablespoon of tomato paste or reduce the amount of water used. You can also substitute ground beef with ground turkey or chicken for a lighter version. Adjust the spice level by adding more diced green chilies or a splash of hot sauce. This soup is versatile and can be customized with your favorite Mexican toppings or additional vegetables like bell peppers or zucchini.
