Ingredients
  

  • 1 cup Unsalted butter Softened
  • 3/4 cup Granulated sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 tablespoon Matcha powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Freeze-dried strawberries Crushed
  • 1 cup Powdered sugar
  • 2 tablespoons Milk
  • 1/4 teaspoon Strawberry extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  • In another bowl, whisk together the flour, matcha powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Fold in the crushed freeze-dried strawberries into the dough.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  • While the cookies cool, prepare the frosting by mixing the powdered sugar, milk, and strawberry extract until smooth.
  • Once the cookies are completely cooled, spread or pipe the frosting onto each cookie.
  • Allow the frosted cookies to set for at least 20 minutes before serving.

Notes

For the best results, ensure your butter is at room temperature to achieve a smooth and creamy mixture. If you prefer a more vibrant color in your frosting, adding a drop of red food coloring can enhance the strawberry hue. Additionally, if you don't have a piping bag, use a plastic sandwich bag with the corner snipped off to apply the frosting.
