Strawberry Oatmeal Bars

Ingredients
  

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 3/4 cup light brown sugar packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 cups strawberries hulled and diced
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine oats, flour, brown sugar, baking soda, and salt.
  • Add melted butter and vanilla extract to the dry mixture and stir until crumbly.
  • Press half of the crumb mixture into the bottom of the greased baking dish.
  • In a saucepan, mix strawberries, granulated sugar, cornstarch, and lemon juice and cook over medium heat until thickened.
  • Spread the strawberry mixture evenly over the crust in the baking dish.
  • Sprinkle the remaining crumb mixture on top of the strawberry layer.
  • Bake in the oven for 40 minutes or until the top is golden brown.
  • Remove from the oven and let it cool for at least 30 minutes before cutting into bars.

Notes

For the best results, ensure that the strawberries are fresh and ripe for a naturally sweet flavor. You can substitute the strawberries with other berries if desired. To easily remove the bars from the pan, line the baking dish with parchment paper, leaving an overhang on the sides for lifting the bars out after cooling.
