  • 1 Wooden spoon
  • 1 sharp knife

Ingredients
  

  • 1 pound beef chuck cubed
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 1 bell pepper chopped
  • 2 large tomatoes diced
  • 3 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme dried
  • 1 cup green beans trimmed
  • 1 cup corn kernels
  • 2 tablespoons parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add beef cubes to the pot and brown on all sides.
  • Remove the beef from the pot and set aside.
  • In the same pot, add onions and garlic, and sauté until onions are translucent.
  • Add carrots, bell pepper, and tomatoes to the pot and stir well.
  • Return the beef to the pot and pour in the beef broth.
  • Season with salt, black pepper, and thyme.
  • Bring the mixture to a boil, then reduce heat and simmer for 1 hour.
  • Add green beans and corn, then cook for an additional 30 minutes.
  • Remove from heat and let it rest for 10 minutes before serving.
  • Garnish with chopped parsley before serving.

Notes

For a richer flavor, consider preparing the beef a day ahead and letting it marinate overnight with the spices; this will enhance the overall taste of the stew. Also, using fresh, seasonal vegetables will contribute to the freshness and vibrancy of the dish, making it a perfect stew for a summer meal.
