Ingredients
  

  • 1 cup Water
  • 1 cup Sugar
  • 1/2 cup White vinegar
  • 2 tablespoons Fish sauce
  • 2 tablespoons Rice vinegar
  • 3 tablespoons Chili flakes
  • 2 teaspoons Minced garlic
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water

Instructions
 

  • Combine water, sugar, white vinegar, fish sauce, rice vinegar, chili flakes, and minced garlic in a small saucepan.
  • Bring the mixture to a boil over medium heat, stirring frequently until the sugar dissolves.
  • In a separate bowl, mix cornstarch with cold water until smooth.
  • Slowly add the cornstarch mixture to the saucepan, whisking constantly.
  • Reduce the heat to low and simmer for about 5 minutes until the sauce thickens.
  • Remove the saucepan from the heat and let the sauce cool for 30 minutes.
  • Transfer the sauce into an airtight container or jar and refrigerate.

Notes

For a sweeter sauce, increase the sugar slightly, or for more heat, add extra chili flakes. Adjust the consistency by varying the amount of cornstarch; less for a thinner sauce. This sauce can be stored in the refrigerator for up to two weeks, making it convenient for future use.
