Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 ripe bananas mashed
  • 1/2 cup chopped nuts optional
  • 1 tablespoon vegetable oil for cooking

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, combine the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the mashed bananas and nuts, if using.
  • Heat a large non-stick skillet over medium heat and add a bit of vegetable oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Transfer pancakes to a plate and allow them to rest for 5 minutes before serving.

Notes

For extra flavor, consider adding a pinch of nutmeg or a handful of chocolate chips to the batter. Use ripe bananas as they are naturally sweeter, adding more depth to the pancakes. To keep the pancakes warm while cooking in batches, place them in a preheated oven at 200°F (93°C).
