Ingredients
  

  • 1 pound ground beef
  • 2 large sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 cup water
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and minced garlic, sauté until the onion is translucent.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
  • Stir in the diced sweet potatoes and season with salt, pepper, paprika, and cumin.
  • Pour in the water, cover the skillet, and let it simmer for 15-20 minutes until the sweet potatoes are tender.
  • Remove the lid, stir everything well, and cook for another 5 minutes to allow excess moisture to evaporate.
  • Sprinkle with fresh parsley before serving.
  • Let the skillet rest for 5 minutes before serving to allow flavors to meld.

Notes

To ensure even cooking of the sweet potatoes, try to cut them into uniform pieces. If you prefer a spicier dish, consider adding red pepper flakes or a dash of hot sauce. This dish pairs well with a side salad or steamed vegetables for a well-rounded meal.
