Sweet Potato Apple Dutch Oven Beef Stew

Ingredients
  

  • 2 pound beef chuck cubed
  • 2 tablespoon olive oil
  • 1 large onion diced
  • 3 clove garlic minced
  • 2 cup beef broth
  • 1 cup apple cider
  • 2 tablespoon tomato paste
  • 2 large sweet potatoes peeled and cubed
  • 2 apples peeled, cored, and sliced
  • 2 carrots sliced
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions
 

  • Heat the olive oil in a Dutch oven over medium-high heat.
  • Add the beef cubes and brown on all sides, then remove and set aside.
  • In the same Dutch oven, add the diced onion and garlic, sautéing until softened.
  • Stir in the tomato paste and cook for 1 minute.
  • Return the beef to the pot and add beef broth and apple cider, bringing to a simmer.
  • Add the sweet potatoes, apples, carrots, salt, pepper, thyme, and bay leaf.
  • Cover the Dutch oven and transfer it to a preheated oven at 325°F (163°C).
  • Cook for 2 hours or until the beef is tender.
  • Remove from the oven and let it rest for 10 minutes before serving.

Notes

For a richer flavor, consider marinating the beef in apple cider and spices overnight before cooking. Additionally, ensure the vegetables are cut into uniform sizes to allow even cooking throughout the stew.
