Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup chopped fresh parsley

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the cubed sweet potatoes in a mixing bowl.
  • Add olive oil, salt, black pepper, garlic powder, and paprika to the sweet potatoes.
  • Toss the sweet potatoes until they are evenly coated with the oil and spices.
  • Spread the sweet potatoes in a single layer on the baking sheet.
  • Bake in the preheated oven for 25-30 minutes, or until tender and slightly crispy.
  • Remove from the oven and let the sweet potatoes rest for 5 minutes.
  • Transfer the sweet potatoes to a serving dish and sprinkle with chopped parsley.
  • Serve warm and enjoy.

Notes

For the best results, ensure that the sweet potato cubes are roughly the same size to promote even cooking. Feel free to experiment with additional spices or herbs to suit your taste. If you prefer a sweeter flavor, consider drizzling a bit of honey or maple syrup over the sweet potatoes before serving.
