Ingredients
  

  • 2 Medium sweet potatoes peeled and diced
  • 2 Tablespoons olive oil divided
  • 1 Teaspoon salt divided
  • 1/2 Teaspoon black pepper divided
  • 1 Pound ground turkey
  • 1 Teaspoon garlic powder
  • 1 Teaspoon onion powder
  • 1 Cup cherry tomatoes halved
  • 1 Cup baby spinach chopped
  • 1/4 Cup feta cheese crumbled
  • 1/4 Cup plain Greek yogurt
  • 1 Tablespoon lemon juice

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss the diced sweet potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper on a baking sheet.
  • Roast sweet potatoes in the oven for 25-30 minutes until tender and lightly browned.
  • While sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium heat.
  • Add ground turkey to the skillet and season with garlic powder, onion powder, and the remaining salt and pepper.
  • Cook the turkey, breaking it into crumbles with a spatula, until browned and cooked through, about 8-10 minutes.
  • In a large mixing bowl, combine roasted sweet potatoes, cooked turkey, cherry tomatoes, and chopped spinach.
  • In a small bowl, whisk together Greek yogurt and lemon juice to make a dressing.
  • Pour the dressing over the sweet potato mixture and toss gently to combine.
  • Divide the mixture into bowls and top each serving with crumbled feta cheese.
  • Let the burger bowls rest for 5 minutes before serving.

Notes

For extra flavor, consider adding a sprinkle of your favorite herbs, such as cilantro or parsley, to the finished dish. If you prefer a spicier kick, a pinch of red pepper flakes can be added to the turkey while cooking. Additionally, this dish is versatile, allowing you to substitute ground turkey with beef or chicken, and you can also add other vegetables like bell peppers or avocado for variation.
