Ingredients
  

  • 4 medium sweet potatoes peeled and cubed
  • 200 grams feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine sweet potatoes, olive oil, salt, black pepper, and dried oregano.
  • Toss the mixture well to ensure the sweet potatoes are evenly coated.
  • Transfer the sweet potato mixture into a baking dish.
  • Spread the crumbled feta cheese evenly over the sweet potatoes.
  • Bake in the preheated oven for 40 minutes or until the sweet potatoes are tender.
  • Remove from the oven and let it rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For best results, make sure to cut the sweet potatoes into uniform cubes to ensure even cooking. You can also experiment by adding other herbs like rosemary or thyme for an additional layer of flavor. If you prefer a creamier texture, consider adding a splash of cream or milk before baking.
