Sweet Potato Lentil Soup

Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup red lentils rinsed
  • 4 cup vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon lemon juice
  • 2 tablespoon fresh cilantro chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté for 5 minutes until translucent.
  • Stir in the minced garlic and sauté for another minute.
  • Add the sweet potatoes and sauté for 5 minutes.
  • Stir in the red lentils, vegetable broth, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes until the lentils and sweet potatoes are tender.
  • Remove the pot from heat and stir in the lemon juice.
  • Let the soup rest for 5 minutes before serving.
  • Garnish with fresh cilantro before serving.

Notes

For a creamier texture, you can blend part of the soup using an immersion blender before serving. Adjust the seasoning to taste, adding more salt or spices if preferred. This soup can also be made ahead of time and stored in the refrigerator for up to 3 days, allowing the flavors to meld and intensify.
