Ingredients
  

  • 2 sweet potatoes large, peeled and cubed
  • 4 potatoes medium, peeled and cubed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon fresh parsley chopped
  • 1/4 cup lemon juice
  • 2 tablespoon honey
  • 1 tablespoon butter
  • 1 teaspoon lemon zest

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine sweet potatoes and potatoes with olive oil, salt, and pepper.
  • Spread the potato mixture evenly on a baking sheet.
  • Bake in the oven for 30-35 minutes until tender and lightly browned.
  • While the potatoes are baking, combine lemon juice, honey, butter, and lemon zest in a saucepan over low heat.
  • Whisk the glaze ingredients together until smooth and the butter is melted.
  • Remove the potatoes from the oven and let them rest for 5 minutes.
  • Drizzle the lemon glaze over the potatoes and sprinkle with fresh parsley.
  • Serve warm as a side dish.

Notes

For best results, make sure to cut the potatoes into even-sized cubes to ensure they cook evenly. Adjust the amount of honey in the glaze according to your preference for sweetness. If you prefer a more intense lemon flavor, increase the lemon zest slightly. The resting time allows the flavors to meld together, enhancing the overall taste of the dish.
