Ingredients
  

  • 2 pounds sweet potatoes peeled and chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 unbaked pie crust

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Boil the sweet potatoes in a medium saucepan until tender, about 15 minutes.
  • Drain the sweet potatoes and mash them in a large mixing bowl.
  • Add melted butter, sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes and whisk until smooth.
  • Roll out the pie crust and place it in the pie dish.
  • Pour the sweet potato filling into the pie crust.
  • Bake in the preheated oven for 1 hour, or until the filling is set.
  • Remove the pie from the oven and let it cool on a cooling rack for 2 hours.

Notes

For a smoother texture, you can use a food processor to blend the sweet potato mixture until creamy. If you prefer a spicier pie, increase the cinnamon and nutmeg according to your taste. To ensure your crust stays crisp, consider blind baking the pie crust for a few minutes before adding the filling.
