  • 1 Baking dish (9x13 inch)
  • 1 Mixing bowl
  • 1 Wooden spoon
  • 1 measuring cup

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 2 cups tortilla chips crushed
  • 1 cup salsa
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup green onions sliced

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a skillet over medium heat, cook the ground beef until browned.
  • Drain excess fat from the skillet.
  • Stir in taco seasoning and water, and let simmer for 5 minutes.
  • In a baking dish, spread a layer of crushed tortilla chips.
  • Spoon the beef mixture evenly over the chips.
  • Add a layer of salsa over the beef mixture.
  • Evenly spread the black beans and corn over the salsa.
  • Top with shredded cheddar cheese.
  • Bake in the preheated oven for 20 minutes until cheese is melted and bubbly.
  • Remove from oven and let cool for 5 minutes.
  • Serve topped with sour cream and green onions.

Notes

To add a bit more spice, consider mixing some jalapeños into the beef mixture. You can also substitute ground turkey or chicken for a lighter version. Feel free to customize the casserole with additional toppings like diced tomatoes, avocado, or cilantro to suit your taste preferences.
