  • 1 Wooden spoon

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 1 large onion chopped
  • 2 cups beef broth
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Add ground beef to the pot and cook until browned, breaking it apart with a wooden spoon.
  • Stir in taco seasoning and ranch dressing mix with the beef.
  • Add black beans, kidney beans, corn, and diced tomatoes to the pot.
  • Pour in beef broth and stir to combine all ingredients.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  • Taste and adjust seasoning if needed.
  • Remove pot from heat and let the soup rest for 5 minutes before serving.
  • Serve hot with optional toppings such as shredded cheese, sour cream, and cilantro.

Notes

For the best flavor, allow the soup to simmer longer if time permits, as this will enhance the melding of spices. Also, when selecting diced tomatoes, consider a variety with added green chilies for an extra kick. Customize your soup with toppings according to your personal preference to make it even more delicious!
