Ingredients
  

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place sweet potatoes on a baking sheet and bake for 45 minutes or until tender.
  • While sweet potatoes are baking, heat olive oil in a large skillet over medium heat.
  • Add ground beef to the skillet and cook until browned.
  • Stir in taco seasoning and water, cooking until beef is fully coated and the sauce thickens.
  • Remove sweet potatoes from the oven and let them rest for 5 minutes.
  • Cut each sweet potato in half lengthwise and fluff the insides with a fork.
  • Spoon the beef mixture evenly into each sweet potato half.
  • Top each with shredded cheddar cheese, diced tomatoes, and chopped cilantro.
  • Drizzle with sour cream before serving.

Notes

When selecting sweet potatoes, choose ones that are uniform in size to ensure even cooking. If you prefer a spicier dish, add a pinch of red pepper flakes to the beef mixture. For a vegetarian version, substitute the ground beef with black beans or crumbled tofu. Remember to adjust the taco seasoning and other spices to taste.
