Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 can (15 ounces) corn drained
  • 1 can (10 ounces) diced tomatoes with green chiles
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) corn muffin mix
  • 1/3 cup milk
  • 1 large egg

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and minced garlic to the skillet and sauté until softened.
  • Add ground beef to the skillet and cook until browned.
  • Stir in chili powder, cumin, salt, and black pepper.
  • Add black beans, corn, and diced tomatoes with green chiles; mix well.
  • Pour the beef mixture into a greased 9x13-inch baking dish.
  • Sprinkle shredded cheddar cheese over the beef mixture.
  • In a medium mixing bowl, combine corn muffin mix, milk, and egg; whisk until smooth.
  • Pour the corn muffin batter evenly over the cheese layer.
  • Bake in preheated oven for 25-30 minutes until the cornbread is golden brown.
  • Remove from the oven and let it rest for 10 minutes before serving.

Notes

For added flavor, consider topping the casserole with sliced jalapeños or a sprinkle of cilantro before serving. If you prefer a spicier version, increase the amount of chili powder and cumin. This dish can be made a day ahead; simply reheat in the oven before serving.
