Tater Tot Buffalo Chicken Casserole

Ingredients
  

  • 4 cup cooked chicken breast shredded
  • 1 cup hot buffalo sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1/2 cup cream cheese softened
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 cup shredded cheddar cheese divided
  • 1/2 cup crumbled blue cheese optional
  • 1/2 cup sliced green onions divided
  • 28 ounce frozen tater tots
  • 1 tablespoon unsalted butter melted, optional, for extra crisp
  • 1 tablespoon chopped fresh parsley optional, garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  • In a large bowl whisk together buffalo sauce, ranch dressing, sour cream, cream cheese, chicken broth, garlic powder, onion powder, and black pepper until smooth.
  • Fold in the shredded chicken, 1 cup of cheddar cheese, and half of the green onions until evenly coated.
  • Spread the chicken mixture evenly in the prepared baking dish.
  • Arrange the frozen tater tots in a single layer over the chicken mixture and drizzle with melted butter if using.
  • Bake uncovered for 30 minutes until the tots are golden and the filling is bubbling.
  • Sprinkle the remaining 1 cup cheddar and the blue cheese over the tots and bake for 8–10 minutes more until melted and lightly browned.
  • Remove from the oven and let rest for 5 minutes.
  • Garnish with remaining green onions and parsley before serving.

Notes

For extra-crispy tots, pre-bake them on a sheet tray for 10 minutes before assembling. Adjust buffalo sauce heat by mixing with more ranch for milder flavor or adding cayenne for extra kick. Rotisserie chicken saves time and adds moisture, but well-seasoned leftover chicken works great too. You can substitute Monterey Jack or pepper jack for cheddar, or use all ranch if you don’t like blue cheese. If the top browns too quickly, tent loosely with foil. Leftovers reheat well at 350°F for 12–15 minutes or in an air fryer to re-crisp the tots.
