Ingredients
  

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs and vanilla extract to the creamed mixture and beat until fully incorporated.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, allspice, cloves, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Chill the dough in the refrigerator for 30 minutes.
  • Once chilled, scoop tablespoon-sized portions of dough and place them on the prepared baking sheet.
  • Bake the cookies for 10 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For the best flavor, make sure to use fresh spices as they significantly enhance the chai flavor profile. If you prefer a softer cookie, slightly underbake them and let them finish cooking on the hot baking sheet. For variation, you can add a pinch of black pepper for a subtle spice kick.
